It’s Asparagus time

Asparagus season in Finland starts early May and lasts until midsummer late June. During this time many restaurants offer asparagus as core part of their menus. Heleats has put together a brief list of good options of where to eat Asparagus.

Home cooking by Feel Good Kitchen

Fresh asparagus is available in the supermarkets around the city. There are plenty of delicious dishes you can do using asparagus and it is rather simple ingredient to work with. We joined forces with Helsinki area based food blogger Aino who is a lover of good-for-you-food and a total health nut. Aino was too kind to share her asparagus soup recipe with the Heleats audience. Join her for delicious vegan recipes & relaxed kitchen experimenting at her blog Feel Good Kitchen.

Asparagus Soup

1 kg asparagus
shallot
3 cloves of garlic
large potato
generous drizzle of olive oil
some water
vegetable broth cube
herb salt & pepper, to taste
2 tbsp lemon juice
3 tbsp white wine vinegar

Clean up the asparagus and chop the onions, garlic and potato. Heat up some olive oil in a large kettle and quickly cook the onions and potato. After the onions begin to slightly brown, add the asparagus and keep cooking. (You can put aside couple pieces of asparagus for a later garnishing). Cook until the asparagus turns bright green.

Then, pour in water until the aspargus is covered and throw in the broth cube and a pinch of salt and pepper. Let cook for 20 minutes or until the veggies are soft. Let cool a bit and puree with a hand blender. Add the lemon juice and the vinegar and spices to taste. (Cook the remaining asparagus quickly with some olive oil and garlic and serve on top of the ready soup). Enjoy!
