People say there are rumors going around saying The Salmon Soup at Fisken på Disken could be the best one in the whole of Europe. By this day there have already been thousands of portions of this beautiful salmon soup enjoyed. Fish restaurant and seafood bar Fisken på Disken is located in a foodie court Kortteli in Kamppi Shopping Center but since last year the salmon soup fans have been able to enjoy this amazing soup at home as well. The chefs Joona Lehto and Mikko Pakola are responsible for the kitchen at Fisken på Disken. The chefs were part of the Finnish Culinary Team of Finland in the Olympics in 2016 where they won silver medals. The chefs believe in classic cookery with a modern twist. Perfectly into 42 degrees celsius cooked the salmon plays a leading role in the salmon soup. The jus has an amazing recipe and accompanies the salmon extremely well.
The chefs are all the time innovating new flavours and Sunday brunch is something totally new for Fisken på Disken. Seasonalities, handicraft and quality food are the key things in the brunch offering. From 5 to 7 shareable dishes are served to the table. As an example the menu features dishes such as Fisken’s skagen, a version of this Scandinavian treat, fried artichoke and vendace roe or smoked whitefish mousse. The brunch menu changes on a weekly basis so the chefs have a chance to surprise the guests every week.
The new brunch concept was tested among friends and family last Sunday and the feedback was great. Anne loved the brunch and said the expectations were high and those were exceeded easily. The menu was delicious and surprising in a positive way. Fresh seafood and interesting flavor combinations were served. The absolute favorite was a blini skagen. Anne says she could eat Fisken’s shrimps even for dessert. She also enjoyed one of the desserts from the menu to freshen up the ending.
